A Cheesy Bacon & Mushroom Omelet

I made this omelet for brunch on a very lazy Sunday.  Binge-watching Downton Abbey all morning on Netflix made me really hungry! :).

IMG_00000749To start, I cut three slices of low-sodium bacon into about one inch pieces, diced an onion, and the sliced mushrooms.  I cooked all three together, adding the mushrooms last.  After removing the bacon grease,  I added the beaten eggs.

When the eggs were almost done, I sprinkled some cheddar cheese on top, and divided the omelet in two.

I definitely needed another cup of coffee after this meal.
