This is a Trinidad-style rice dish (yup, I’m originally from Trinidad), made with red kidney beans, coconut milk, and chicken. Nowhere near as good as my dad’s version, but not bad. I’m not that great at rice dishes, tbh.
A chicken pita wrap, with salad. I added some feta cubes and used Greek salad dressing.
